Pink Pickled Onions

You know those lovely pink onion slices you see on all kinds of dishes, sour, sweet and a little salty. A great tangy garnish to add to anything from a rice bowl, to a salad or tacos.




Pink Pickled Onions


1 red onion

1 c water

1/2 c apple cider vinegar

1 Tbs sugar

1/2 Tbs salt

1 tsp peppercorns


Thinly slice red onion. Place slices in a clean glass jar.

Add water, apple cider vinegar, sugar, salt and peppercorns into a small saucepan. Heat until the sugar and salt fully dissolves and it starts to simmer.

Pour hot liquid into jar over the onions. be careful doing this part!

Cool completely and store in refrigerator. Enjoy as a garnish on salad, bowls and more!
