Three Sisters Inspired Tacos

Pumpkin, beans nd corn, known as the 'Three Sisters' in traditional Indigenous farming methods. These three has been cleverly used by Indigenous Peoples together as a way to grow and harvest sustainably for a very, very long time. And I'm sure by no coincidence, they also taste great together!


This recipe uses all three together with a chocolate mole inspired rub to make a fall taco you wont soon forget.




This recipe is great on a cool fall day, with the spices and hearty fillings. The earthy umami tones from the pumpkin and beans pairs great with the cocoa in the spice rub, and the corn adds a touch of sweet!





Mole Spice Mix


1 TBS garlic powder

1 tsp ground chipotle pepper

1 tsp roasted ground coriander

½ tsp ground Ancho Pepper

½ tsp cayenne

½ TBS cumin

1 TBS oregano

1 TBS cocoa powder

½ tsp cinnamon


Mix well and store in a jar. Double or triple recipe to have more for other dishes!


Three Sisters Inspired Tacos

1 small or 1/2 of one medium pumpkin

1 cup black beans

1 cup corn kernels (fresh or frozen)

Canola oil

Mole Spice mix

Salt

Corn tortillas

Avocado or avocado creme

Cotija Cheese

Cilantro


Instructions:

Preheat oven to 450*

Core, peel and chop pumpkin into small cubes. Toss with canola oil, a small spoonful of spice blend and few pinches of salt. Spread onto a lined sheet pan. Roast for 10-12 minutes at 450*


Remove from oven, add corn and beans. Roast for another 5-8 minutes.


Enjoy hot with seared corn tortillas. Top with cilantro, avocado crème & cotija cheese.
